My Chicken Enchiladas are so delicious – but what makes them even better is my homemade chicken enchilada sauce…

Ingredients

  • 1 cup of cilantro
  • 4oz can of chipotles
  • 2oz can of green chilies
  • 1 jar of roasted red peppers – thinly sliced
  • small white onion – chopped
  • 2 jalapeños – chopped
  • 1 roma tomato – chopped
  • 2 tablespoons of olive oil
  • clove of garlic – minced
  • 1 tablespoon of lime juice
To start – put olive oil, garlic and the white onion in the pan and let it sweat a bit.  Add the roasted red peppers and chipotles.

Once the sauce has cooked for about 6 minutes, add the jalapeños, the roma tomato, the green chilies and the cilantro.  After another 6 minutes, blend together with a hand mixer.

Let the sauce cook for about 10 minutes on low and then smother it over the chicken enchiladas.

Ingredients

Instructions
  1. Gather all of your ingredients and get out a large frying pan.
  2. To start - put olive oil, garlic and the white onion in the pan and let it sweat a bit.
  3. Add the roasted red peppers and chipotles.
  4. Once the sauce has cooked for about 6 minutes, add the jalapeños, the roma tomato, the green chilies and the cilantro.
  5. After another 6 minutes, blend together with a hand mixer.
  6. Let the sauce cook for about 10 minutes on low and then smother it over the chicken enchiladas. Eat up and enjoy.
