The best gluten free banana bread is here. I’ve made my fair share of banana bread, or banana muffins even, yet this recipe is the best! Seriously. My husband said it’s the best banana thing I’ve ever made. Total score. Better yet, I’m going to share this recipe with you! Let’s get baking.

Ingredients

  • 1/2 a cup of salted butter
  • 1 cup of sugar
  • 2 eggs
  • 1 1/2 teaspoons of vanilla
  • 2 cups of gluten free flour (with xanthan gum)
  • 1/2 teaspoon of salt
  • 2 teaspoons of baking soda
  • 1 cup of yogurt
  • 2 overly ripe big bananas (or 3 small)

First – gather all of your ingredients. You want the bananas for this recipe to be almost black. Also, fresh (not frozen) works best! Set the oven to 350 degrees.

Get our your mixer and cream the butter and sugar. Then, add in the eggs and vanilla. Mix well. Sift the flour, salt and soda together. Then, slowly add in 1/2 a cup at a time. Mix in the yogurt and the bananas. You’re welcome to mix in up to 3/4 of a cup of nuts or chocolate chips, yet on this recipe, I like it plain.

Spray or butter a 9×9 dish and fill with the dough. Bake at 350 for 35-45 minutes (mine took 39).
