Salad time! Broccoli salad is a great salad when you have to bring something to a potluck or when you need to make the salad ahead of time. Why? The broccoli doesn’t wilt like regular salad. Plus, it’s hearty and colourful.

Ingredients

  • 2 bunches of broccoli
  • 1 carrot
  • 1/4 cup of red cabbage and red onion
  • 1/2 dried cranberries and pecan pieces
  • 1 pack of turkey bacon
  • 2 cups of mayo
  • 1/2 cup of sugar
  • 1/4 cup of apple cider vinegar

First – dice up the turkey bacon and get it cooking. Second – dice the red onion. Next, cut the head of broccoli into pieces and cut the stems of the broccoli and the carrot into match stick pieces. Slice up the red cabbage. If you’re in a rush, you can use President’s Choice Broccoli Pieces (2 bags) and Broccoli Slaw (1 bag). If you use the bags, you don’t need the carrot and cabbage. Truth…I used the bags!
