Recipe: Canada Day Treats 2026

Canada Day treats 2026! That’s right, it’s our nation’s birthday and what better way to celebrate than with treats?! These gluten free crack treats, or toffee bark, are so good. They’re sweet, salty, and a perfect afternoon pick-me-up with a cup of coffee (decaf for me!). Okay, let’s jump in and bake up.

First step, if you’re going gluten free like me, be sure your ingredients are fully GF – the Schar brand is my go-to for dinner crackers. Time to bake.

Ingredients

  • 24 saltine crackers
  • 1 stick of salted butter
  • 1/2 cup of packed brown sugar
  • 2/3 tablespoon of vanilla
  • heaping 1/2 cup of chocolate chips
  • 1/4 cup of red and white sprinkles

First, line a baking sheet with tin foil. This will help keep the mess at bay and will make for a speedy cleanup. Then, heat the oven to 335 degrees.

Lay out the 24 gluten free crackers on the pan – I used a small standard baking sheet.

Next, melt the butter in a pan on low and once fully melted add the vanilla and brown sugar, then whisk until well combined. Bring to a bubble for about 3-4 minutes and then pour over the crackers and slip into the oven for another 3-4 minutes.

Once the pan comes out of the oven, cover with chocolate chips and let it sit for 3-4 minutes (allowing the chips to melt), then spread and top with the sprinkles. Chill for an hour, crack and eat up.

On this recipe, I didn’t crack up the pieces, but cut them on a large cutting board – you do what works best. I was in a snacking mood and didn’t want to fully wait for the chocolate to set, so I used a knife. I love snack time!

Any special Canada Day plans for you? Nothing going on here – we’re headed to the gym in a bit and then off to run a few errands before the stores close for the holiday. We’re hoping, since it’s the middle of the week, the fireworks are at bay in the neighbourhood. Daphne will sleep better (and so will we!) if they’re not too loud. Either way, we have snacks to help! Ha-ha.
