Chocolate Cupcakes with Agave Buttercream: 3ten.ca

Chocolate cupcakes – with yogurt to make them extra moist (I know…a lot of people hate that word…but it’s true, the cupcakes are moist!). These chocolate yogurt cupcakes with agave buttercream are delicious. Let’s bake up.

To top it off – the icing is so good. You need to try it, too.

Ingredients

  • 2 1/2 cups of cake flour
  • 1 pack of chocolate pudding mix (3.9oz)
  • 1/2 cup of coco powder
  • 2 teaspoons of baking soda
  • 1 teaspoon of salt
  • 1 1/2 cups of sugar
  • 1/2 cup of brown sugar
  • 1 cup of canola oil
  • 1 cup of yogurt
  • an egg
  • 1 teaspoon of vanilla
  • 1/2-1 cup of water

Icing Ingredients

  • 1 cup salted butter – soft
  • 2 1/2 tablespoons of agave syrup
  • 1/2 tablespoon of vanilla
  • 3-3 1/2 cups of icing sugar

First – gather all of your ingredients and get ready to bake up. I be sure you’re using cake and pastry flour – oh, and tollhouse coco…it’s so good.

Next – mix the sugars, oil, yogurt, egg, vanilla and water together. In a separate bowl, mix all the other ingredients.

Then, slowly add in the dry to the wet.

Grab come cute cupcake liners. Fill up and bake at 350 degrees for 20-23 minutes – until toothpick comes out clean.

While they are baking, time to make the buttercream.

Use soft butter and slowly add in the powered sugar. Once it’s all incorporated, mix in the agave.

Whip it well.

Take the cupcakes out and let them cool for about an hour – you don’t want the buttercream to melt all over them before icing. Once they are cool, ice away.
