Recipe: Cilantro Lime Chili Dressing
Cilantro lime chili dressing is the perfect amount of heat on a summer salad. This dressing is one of my favourites and I’m excited to share it with you. I eat this dressing on quinoa salad, avocado and egg salad, or even bean and corn salad. Heck, I might even try it on corn on the cob, it’s that good. Best made fresh, so keep a stock of cilantro on hand.
Let’s get started!
Ingredients
- 100ml of olive oil
- 50ml of lime juice – fresh
- 3/4 of a cup of chopped cilantro (lose)
- 1/2-1 teaspoon of chili powder
- large pinch of salt
That’s it, that’s all. Be sure you chop the cilantro up, but not too finely. You want chunks for sure. Cilantro is something I buy each time I go to the grocery store and I usually only end up using about 60% of it. I know, a bit of a waste; however, it’s so disappointing when I want it and it’s not in my fridge. Not to worry, I compost, so it’s not a total waste. I love cilantro so much. Don’t you?
Put all of the ingredients into your dressing shaker.
Shake away.
Done – time to dress the salad.
This past weekend I made this delicious white bean and quinoa salad – I’ll share the recipe on Friday – and I used this cilantro lime chili dressing. Just the right kick of heat.
