Recipe: Summer Spinach and Berry Salad
The market had some ‘too good to pass up’ berries! But for some reason, today I didn’t feel like berries – I felt like spinach salad! So, here you have it – the summer spinach and berry salad.
Ingredients
• about 1 ½ cups of blueberries
• about 2 cups of strawberries
• one pack of spinach (5 oz.)
• 1 cup of Brazil nuts
• lemon poppy seed dressing
Variation – add: 1 cup of feta and use a balsamic vinaigrette instead of the poppy seed dressing. With this variation you’ll cut the sweetness with the feta. It’s so good both ways!
Wash the spinach, blueberries, and strawberries – then cut strawberries into quarters. The blueberries in this summer spinach and berry salad are small and you don’t want the strawberries to take over.
Mash the protein packed Brazil nuts. (I find this far easier than using a knife to chop the nuts – plus, it’s fun!)
Put everything in a bowl, add dressing, and mix well.
Serve chilled. I actually like this salad when it’s made a few hours early, sits in the fridge, and all the goodness mixes together.

Ingredients
- 1 1/2 cups of blueberries
- 2 cups of strawberries
- 1 bunch spinach
- 1 cup of brazil nuts
- lemon poppy seed dressing
Instructions
- wash all the berries
- wash the spinach
- cut the strawberries in quarters
- smash the brazil nuts
- mix everything together
- toss with the dressing
- eat

The Berry and Spinach Salad looks very yummy and the picture are fabulous. I have all the ingredients except the poppyseed dressing so a quick trip to Farm Boy in the morning and lunch will be a treat tomorrow.
