Recipe: Bueno Burrito

It’s Burrito time!

You can see from the second picture above that cooking isn’t always the cleanest job. I make a total mess, but I do clean it up! Always worth it.

Ingredients

First – get the chicken going. I use coconut oil (it’s solid to start with and is able to withstand high heat – and no coconut flavour) and heat it up for about 3 minutes – throw in the chicken. It’ll start to smoke a bit, but it’s awesome for giving it that char/crispy outside. I season my chicken with a tex-mex blend of spices. Get your vegetables cooking when you chicken is about halfway done.

Lay everything out in dishes and get ready to assemble.

Be careful not to fill your burrito too full – it’ll split the tortilla. Stack, roll and eat.
